Nan’s chocolate Fudge slice

2 delicious pieces of nans chocolate slice

A family favourite!

Equipment: Bowls, slice tin, spoon, measuring cups, fork, sieve, and spoons

Ingredients:

2/3 cup margarine (melted)

1 1/2 cups brown sugar

2 eggs

2 tablespoons cocoa powder

1 1/2 cups self-raising flour

1 cup desiccated coconut

1 cap vanilla essence

Chocolate icing

1 1/2 cups icing sugar

1/4 cup cocoa powder

1 tablespoon margarine, melted

2 tablespoons boiling water

100’s and 1’000’s

Method:

  1. Mix all dry ingredients

  2. Add melted margarine

  3. Place into greased/floured tin

  4. Bake in moderate oven 180oC/fan forced 150oC for 20 - 25mins

  5. For the icing, sift dry ingredients, add melted margarine and water and stir

  6. Ice with chocolate icing and 100’s & 1’000s

  7. Cut into squares with moistened knife when icing is set

Tips:

  • Best shared with family and friends

  • To grease the tin, rub the surface with margarine on baking paper and then place a spoon of flour in the tin and move it around to cover the surface

  • Don’t overcook or it will dry out and go from fudgy to cakey

  • Use a moist fork or fingers to spread the mix evenly in the tin

My nan would always have her dark green three-tier tin in her pantry stocked with cakes and slices. This chocolate slice was always in the top tier of the tin. It is a favourite of everyone in our family. The annoying thing is that no matter who makes it, no one can ever get it as good as nan made it. Probably because she added a sprinkle of love to every slice. It doesn’t stop us all from trying though and seeing who comes the closest. It is amazing how powerful memories of food can be and how beautiful it is that these memories of my nan live on through food.

I am definitely going to have to make this again because I have a very hot oven (frustrating) and I overcooked it! Baking is not really my jam!
